New family Mexican restaurant opens in Hampton

After a month of extensive remodeling and other upgrades, Plaza Veracruz Family Mexican Restaurant has opened in Hampton.
     The new business is located in the former El Paisita building on Highway 65. Despite its location, guests at Plaza Veracruz should expect a revamped dining experience thanks to new owner Alicia Saldivar-Rodriguez. The local businesswoman has spent the past month working with family and friends to complete interior renovations and improve the restaurant’s appearance.
     “There were a lot of days when we wouldn’t get out of here until 2 a.m., and then we were back in at 6 or 7 the next morning right away,” she said. “It was pretty crazy some days.”
